Santa Rosa’s Zazu chefs invent new pig breed, and you can eat it

Oh, those crazy pig scientists, tinkering with perfectly fine swine.
Santa Rosa chefs Duskie Estes and John Stewart not only specialize in cooking pork, now they’re creating pork, coming with what they think might be an entirely new breed.
Estes and Stewart, owners of Zazu in Santa Rosa and Black Pig Bacon Company, raise pigs on their Forestville partner farm. Two of their favorite breeds are the rare heritage Mulefoot and the Red Wattle.
